It took five years to carefully restore and renovate the colonial mansion that is now Inkaterra La Casona, an intimate, beautiful refuge tucked away on a quiet square in central Cusco.     Set within the property’s own thick walls, the Inkaterra La Casona Restaurant has a keen eye fixed firmly on classic Peruvian cuisine, local ingredients and traditional recipes. Though given a refined twist and usually accompanied by a good selection of quality wines, many of the original recipes served in the onsite restaurant, particularly in the evening, have originated from much humbler beginnings than is the case in this charming, atmospheric restaurant.
